Famous people!

While waiting for Callie and Preston to ride this ride, we met the actress from My Big Fat Greek Wedding, Nia Vardalos. She said to me what a small little baby. My sister then said, "ARe you from"... and she said, "Yes" very quietly. We also ran into our Relief Society president and my cousin who I haven't seen in years. It was great to catch up.

I forgot to post this with our Disneyland pictures.

Worn Out!

Callie is not pretending to be asleep. In fact she starting to bob her head and almost fell out of the stroller. Taylor had to catch her. Two days in a row makes you very tired. It is 2 days later and I am still tired. But I am staying up at night with a small baby. We had so much fun at Disneyland and now we have passes and can't wait to go back.
Preston and I watching the parade. He loved it. He waved to all the characters.


This was on a Toy story ride and you shoot targets and you earn points. I got to level 2 and Taylor got to level 3.

California Adventure





California Adventure is right next to Disneyland. When you buy a ticket you can get into both parks. It was built in 2001. It had more of the Pixar characters at California Adventure. The kids went and saw Playhouse disney like on the Disney channel. They loved it. It was cute to watch their faces.

Ariel and Callie. She loved meeting the princesses. Afterwards there was a shop to buy all the princess accessories. Preston got a sword. We got one for Callie too so they can play together.

I can't remember what this flower is called but the colors were so beautiful. Taylor now wants to make our landscaping look better.

Disneyland!


My parents, my sister and her family, and her in-laws went to Disneyland on Tuesday and Wednesday. We decided to get season passes since we live here. The kids had a blast. This is our group.

Paige's Blessing Day!





Paige was blessed on Sunday, February 28th. We were able to have a lot of family come out for it which was very special. My parents, Taylor's parents, my sister and her family, my grandma, aunt, uncle and some really close friends of Taylor's family all came out. It was fun to have everyone here. Taylor's blessing was wonderful. My friend offered to right it down for me and I thought it was great to be able to go back someday and read it.

Grown up Mac and Cheese

I have been meaning to try this recipe for a long time. I watched the episode and thought it looked delicious. I bought all the ingredients last week and tried it last night. It was great. You gotta try this recipe. The bacon and basil adds a lot of flavor to it.

Ingredients

  • 4 ounces thick-sliced bacon
  • Vegetable oil
  • Kosher salt
  • 2 cups elbow macaroni or cavatappi
  • 1 1/2 cups milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 4 ounces Gruyere cheese, grated
  • 3 ounces extra-sharp Cheddar, grated
  • 2 ounces blue cheese, such as Roquefort, crumbled
  • 1/4 teaspoon freshly ground black pepper
  • Pinch nutmeg
  • 2 slices white sandwich bread, crusts removed
  • 2 tablespoons freshly chopped basil leaves

Directions

Preheat the oven to 400 degrees F.

Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.

Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.

Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.

Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Paige's 1st day of church

We only went to sacrament her first day. She was very good. She didn't make a peep. This Sunday we will be attending all of church and hopefully she can survive Junior and Senior Primary. Her dress was a little big. She is still in NB clothes and I don't want to buy a dress that she wears twice. So she will have to make due with what she has.

They love their baby sister


They love their baby sister so much. They ask to hold her all the time and kiss her to death. Preston is very sweet with her. Callie is going to be a good mom.
